  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder

Burger Ingredients

  • grated lettuce
  • bread
  • mayo

Instructions

  1. Cut the pigeon breast in half lengthwise in order that you’ve got two pieces (one for every burger).
  2. Combine sriracha (or hot sauce) with buttermilk. Place the chicken within the buttermilk mixture and place within the refrigerator for an hour.
  3. In a bowl, mix flour and every one seasonings. Stir to combine.
  4. After an hour, remove the pigeon breast pieces and discard the remaining buttermilk.
  5. Puree the pigeon breast pieces with flour mixture, remove excess.
  6. Dip the chicken pieces back to the buttermilk, removing excess. Dredge again in flour mixture, get obviate excess.
  7. In a large saucepan with high sides (I use a high-sided forged iron pan) or large dutch oven, add oil (enough to rise 1.5 to 2 inches on the side of the pan). you would like temperatures around 350 degrees Fahrenheit.
  8. I heated the oil to about 360 degrees Fahrenheit because the temperature would drop because the chicken was added.
  9. Carefully put the chicken pieces within the hot oil and cook about 3 minutes per side or until they’re cooked and therefore the juice is obvious.
  10. counting on the thickness of the chicken pieces, it’s going to take a touch longer to cook. See note below.
  11. To make a crispy chicken burger, spread mayo on the bun, sprinkle with chicken and garnish with lettuce wedges.
