Easy Mexican Casserole

Easy casserole with beef and simple ingredients are some of our favorite foods! This Easy Mexican Casserole Recipe is a classic noodle and hamburger casserole that has been in the family for years. Even our picky eaters enjoy eating this easy meal!

  • 1/3 green pepper diced
  • 1 1/2 cup sharp shredded cheddar cheese
  • 1 1/2 pounds ground beef
  • 1 1/4 cup onion diced
  • 8 ounces noodles
  • 1/2 teaspoon salt
  • 2 cans tomato soup
  • 1 cup water


  • 4 tablespoons butter melted
  • 1 1/4 cup bread crumbs


  1. Brown ground beef, season with salt.  Add onions while ground beef is cooking so onions soften.  Drain fat from ground beef. 
  2. Cook noodles. 
  3. Preheat oven to 350 degrees Fahrenheit.  Lightly coat 9×13 inch casserole dish with non-stick cooking spray.
  4. Use a mixing bowl and combine the ground beef mixture, cooked noodles, cheese, water, tomato soup and pepper.
  5. In a separate microwave safe bowl melt butter and stir in breadcrumbs.  Sprinkle evenly over top of casserole.  Bake for 35 – 45 minutes until breadcrumb mixture is browned.
