Healthy Broccoli Salad

Broccoli salad is a combination of broccoli, bacon, onion, cranberries, sunflower seeds and goat cheese. And it’s topped with creamy mayonnaise yogurt sauce. Very easy and delicious!

Serve this salad with my Crispy Roasted Chicken Thighs, Herbed Honey Mustard Chicken, or Roast Chicken Souvlaki.

Healthy Broccoli Salad

Ingredients

Broccoli Salad

  • 1/4 cup goat cheese, crumbled
  • 1/2 cup dried cranberries
  • 1 head of broccoli, about 5 glasses of florets
  • 8 pieces of bacon
  • 1/3 cup shallots, diced
  • 1/2 cup of sunflower seeds

Broccoli Salad Dressing

  • 1/4 cup plain yogurt
  • 1/2 cup mayonnaise


Instructions

  1. Preheat the oven to 400 degrees Fahrenheit. Add the bacon slices to the parchment-lined cake tray and cook for 15 minutes or until crispy. Remove the meat from the oven and transfer it to a paper towel to dry and cool.
  2. While the meat is cooking, cut all the broccoli florets and make sure they are all bite size. Add them to a large bowl with shallots, dried cranberries, sunflower seeds and goat cheese.
  3. To make the sauce, add mayonnaise and yogurt to a small bowl and stir together. Add the dressing to the mixing bowl and stir until everything is well mixed.
