Oat Crusted Salmon
It’s January and I always like to feature Scottish recipes this month in honour of the Bonnie Bard, Robert Burns who haled from this county of Ayrshire. So Today it is my oat crusted salmon, Scottish salmon of course if you can get it. At least I can say that this first recipe of the year is actually rather a healthy one.

Super healthy recipe for oat crusted salmon, the perfect light supper dish
Ingredients
• 4 salmon fillets
• 50g porridge oats
• 2 tbsp chopped fresh dill
• grated zest 1 lemon
• 35g flaked almonds crumbled
• 1 egg beaten
• 1 tbsp olive oil
• Salt and pepper to taste
Instructions
1. Preheat oven to 200C/Gas 6 line a baking tray with baking parchment
2. Place the slamon fillets skin side down on the lined baking tray
3. Mix the oats with lemon zest, dill, almonds and seasoning with the egg
4. Brush the salmon fillets with olive oil then press on the crumble topping
5. Bake for 20 minutes
