Spinach Avocado Chicken Burgers Recipe

This paleo spinach avocado chicken burger is the best healthy burger. They are packed with healthy fat, protein, and even hidden vegetables. Make them on weekdays, or serve them in backyard cooking.


For Chicken Burgers

  • 1/2 teaspoon black pepper
  • Butter Lettuce (optional)
  • 2 teaspoons garlic powder
  • One lime juice
  • 1 lb of ground chicken
  • 1/2 cup spinach, finely chopped
  • 2 tablespoons coriander, finely chopped
  • 2 tablespoons coconut flour (optional- acts as a binder)
  • 1 tablespoon of avocado oil (plus if you fry or roast)
  • 2 tsp shallot powder
  • 1 teaspoon sea salt
  • 1 small avocado (or half a large avocado), diced into several pieces

For Avocado Mayo

  • 4 tablespoons of avocado oil
  • 1/8 teaspoon black pepper
  • 2 medium avocados
  • One lime juice
  • 1/4 teaspoon sea salt


  1. For avocado mayo, combine all ingredients in a high speed blender until smooth. Put aside.
  2. Prepare a grill or grill skillet and set it to high heat. Add avocado oil to the grill pan if using.
  3. Mix the ground chicken with seasonings, spinach, coconut flour, lime juice, and avocado oil until evenly mixed.
  4. Gently fold the avocado slices, being careful not to crush them.
  5. Shape the chicken into 4-5 burgers, remove the avocado to ensure it is spread evenly.
  6. Bake the burger on the surface of the grill (using extra avocado oil if fried in a frying pan) for about 5 minutes on each side, or until the internal temperature reaches 165 F.
  7. Top with optional avocado mayo and serve in a lettuce cup like bread, or enjoy the burger yourself.
