Chocolate Shake Ganache

  • 2 cups of chocolate chip or semi-sweet milk
  • 1 cup thick cream

Waffle Cake Dough

  • 1 3/4 cup all-purpose flour
  • 1 teaspoon of vanilla extract
  • 2 teaspoons of baking powder
  • 1/2 cup softened salted butter
  • 3/4 cup of granulated sugar
  • 1 cup buttermilk
  • 1 large egg


  • 1 pound of strawberries or optional raspberries


  1. Make ganache: bring 1 cup of thick cream into a small saucepan over medium heat. After boiling, stir the chocolate until smooth. Transfer to the refrigerator until cool until reaching a consistency that can be a spoon, about 1 hour. Once cool, use the hand mixer to whisk the mixture until it reaches the soft peak. Ganache will stiff when returning to the fridge.
  2. Make waffle dough: Use a hand mixer to whip the butter and sugar until creamy, about 2 minutes. Add buttermilk, eggs, and vanilla extract and shake until mixed. Add flour and baking powder and stir at low speed until just combined, rub the sides and bottom of the bowl to make sure everything is mixed.
  3. Preheat Belgian Waffle Maker. Rub the dough 2/3 cups of the mixture over the waffle iron. Cook waffles one at a time. Transfer cooked waffles to a wire rack to cool completely.
  4. Assemble cake: layer cake with at least 4 waffles, opaque with whipped ganache between each layer. Decorate with fresh berries.
