This easy vegan-coated pumpkin dessert is a dream vacation destination.
Makes this a lot easier than it looks. Isn’t that the best when a luxury dessert is truly a lazy dream of an undercover mother? You can be naughty and make it in individual jars, but the easiest is to throw it together in a square pan.

Ingredient
- Creamy Pumpkin Filling (see recipe below)
- ½ cup chopped pecans, you can use raw or roasted but I like to bake
- 1 ¾ cup of crumbled cake, use gluten-free if needed
- 1 container topping vegan shake (or make it yourself as in this recipe) (the container that I used was a 9 ounce container and had less than 3 cups of whip)
- Easy Pumpkin Caramel (see recipe below)
Easy pumpkin caramel
- ¼ cup of almond butter
- 1 teaspoon of pumpkin seasoning
- quick sea salt
- ½ cup maple syrup
- ¼ cup of pumpkin puree (you will use one can of 15-ounce pumpkin in total for this and its contents)
Creamy Filling Pumpkin
- 1 ¾ cup of vegan vanilla yogurt
- 1 tablespoon of pumpkin seasoning
- ½ teaspoon of sea salt
- 1 ¾ cup of pumpkin puree (you will use one can of pumpkin 15 ounces in total for this and caramel)
- ½ cup of coconut sugar
Instructions
- Make pumpkin caramel by putting everything into a bowl and whisk it hard until it is smooth and caramel-like.
- Make the pumpkin fill by putting everything in a bowl and stirring until it’s nice and smooth.
You can make this in an 8 ounce bottle or in a square pan.
- Crushed Cookies.
- 5 tablespoons of pecans

- 1/3 caramel
- Shake topping
- The last of the pecans
- 1/3 caramel
